Summer officially starts tomorrow, but I am still enjoying soup! They are quick, easy, are nutrient dense and have a host of health benefits...what's not to love?
One of the main reasons I enjoy soup year round is because they are incredible for gut repair. Having Hashimoto's, an autoimmune condition, and a long history of digestive issues, gut health is a top priority for me...

I am sitting here in my Ugg boots, wrapped in a blanket with the heater on...how wonderful is that?! No, seriously, I love the cool weather and much prefer it to the heat.
One reason is because the cold = soup weather, and I love a good soup!
This Thai Vegetable Soup is hormone friendly as it is low carb, full of fibre and has some healthy fat and gut healing bone broth...oh, and it is packed with flavour...

I first transitioned over to zoodles. If you don't know what those are, they are basically julienned zucchini.
Truth be told, I never really liked them. At the time, there weren't many alternatives, so I just cut the "pasta" from my diet for many years...
When I was 24 I moved to London. What an incredible experience that was! I stayed for two years, but would have absolutely stayed longer if I could have extended my visa. I am half Sicilian so bread and pasta were an every day staple for me. But guess what? Things got easier in that time and my health really started to improve...

Before I changed to a low-carb/paleo diet, I would order a Belgian waffle with butter, maple syrup, whipped cream, and strawberries without fail every time I went to brunch. Talk about a sugar hit! No wonder I would come home tired and would be ready for another meal just a couple of hours after stuffing my face. Oh the wonders of knowledge and hindsight...

Gut health is vital to several things. For example, poor gut health is linked to a number of mood issues, including depression and anxiety. There are a couple reasons for that. First, about 80% of our serotonin in stored in our gut, so when that isn’t functioning properly, then serotonin levels can be impacted. Second, when the microbiome is out of the ideal range – meaning the bad bacteria have outnumbered the good, then mood is impaired...
