Cinnamon Vanilla Protein Waffles
I am a big waffle fan. Let’s be honest, who doesn’t like a delicious hot waffle?! Before I changed to a low-carb/paleo diet, I would order a Belgian waffle with butter, maple syrup, whipped cream, and strawberries without fail every time I went to brunch. Talk about a sugar hit! No wonder I would come home tired and would be ready for another meal just a couple of hours after stuffing my face. Oh the wonders of knowledge and hindsight.

We often have these for dinner on a Friday night. Because they are slightly sweet from the cinnamon and vanilla, they double as dessert. Winning! They are loaded with protein and good fat to help keep you full and satiated for hours.  

This recipe is enough for us both to have dinner and brunch the following day. If you have a larger family, double or triple the recipe. You can also make a big batch and store them in the freezer for a quick meal during the week.

  1. In a large mixing bowl, combine the dry ingredients.
  2. Whisk the eggs and add to the dry ingredients.
  3. Add the remaining wet ingredients to the dry.
  4. With a stand mixer, mix medium-low 30-60 seconds.
  5. Preheat the waffle iron to the desired setting.  We like ours pretty well cooked, almost crunchy, as you can see from the photo.
  6. Pour 1/3 cup of batter into each waffle square and cook according to your waffle iron instructions.
  7. Top with ghee and organic berries. I like to use organic frozen berries, pop them in a bowl and microwave for about a minute...then I just smoosh them with a fork!
