Baking is one of my favorite things to do. I would choose it over cooking any day!
As most of you know, I have been on a low-carb, Paleo type of diet for well over a decade. This type of diet helps keep my Hashi's and PCOS in remission and manage my adenomyosis naturally.
However, sweet treats are something I will not do without!
So, instead, I make healthier versions that support my hormone health.
Coconut also has a ton of health benefits. It is one of the most fiber rich foods available. Fiber is important for bowel motions, yes, but it has another really important function.
Fiber is necessary to eliminate excess estrogen. Here's why...
The liver clears excess estrogen and sends it to the colon for elimination. However, in order for the estrogen to be eliminated, it has to bind to fiber! If it doesn't, then it will get reabsorbed, which can lead to estrogen dominance and/or estrogen dominant conditions, like endometriosis, uterine fibroids, adenomyosis and even PCOS.
These delicious cookies are they are full of healthy fats. Not only from the coconut flour, but also the almond flour and the ghee. This means they will help keep us full and satiated, help with sustained energy and regulate blood sugar.
Balanced blood sugar is the foundation of hormone health.
*Pro tip: Sift your coconut flour before you mix anything with it to make your baked goods even lighter. Whisking your eggs really well before adding them to the mix also helps with this.
Ingredients:
- 1 1/4 cups Blanched Almond Flour
- 1/4 cup Coconut Flour
- 3/4 tsp Aluminium Free Baking Powder
- 1/4 tsp Fine Celtic Sea Salt
- 6 Tbs Grass-Fed Ghee (room temp)
- 1 Free Range Egg (room temp)
- 1 tsp Pure Vanilla Extract
- 1/4 cup Swerve Brown Sugar (packed)
- 2 Tbs Monk Fruit
- 70g Lindt 70-85% Chocolate
Directions:
- Preheat oven to 350° Farenheit.
- Mix together flours, baking powder and salt.
- In a separate bowl, mix the ghee, egg, vanilla and sugars
- Combine the wet and dry ingredients. Mix well.
- Chop the chocolate into chunks then mix through the batter.
- Spoon into balls.
- Flatten with hands before baking as they won't change shape while baking.
- Bake 11 - 12 minutes or until the bottoms are golden brown. Do not overcook them or they will become dry.
