I have been eating a low-carb lifestyle for about 14 years now...
And let me tell you, I will NEVER give up the desserts! A life without cookies & brownies just sounds awful lol!
I have several cookie recipes on my blog, but they all contain chocolate (because I admit, I am a chocoholic!). I realize not everybody wants chocolate, so I have done a plain old peanut butter cookie.
They are DELICIOUS! Seriously. So good in fact that I get asked to bring them to gatherings. I even had a friend ask me to bake a batch just for her! Talk about a compliment! I felt so honored.
Just a couple fun facts before we jump to the recipe.
First, you can do this with any nut butter if peanuts aren't your jam. You could likely also do this with sun butter (made from sunflower seeds).
Second, these are jam packed with healthy fat. Fat is amazing for keeping us full and satiated, which can help us lose weight. It also helps to regulate blood sugar, which means we are less likely to get hangry, have more stable energy and less sugar & refined carb cravings. Winning!
This is super important when it comes to hormones health and insulin resistance.
We also need fat to make sex hormones, like estrogen and progesterone.
Fat is vital to brain health because the brain's gray matter is made up of about 60% essential fatty acids.
Not only that, fat can also increase serotonin levels temporarily!
Essentially what I am telling you is that these are healthy cookies. You're welcome!
Ingredients:
- 1 cup 100% Peanut Butter
- 1/2 tsp Aluminum Free Baking Powder
- 1/4 tsp Organic Ceylon Cinnamon
- 1/8 tsp Celtic Sea Salt
- 1/4 - 1/3 cup Swerve Brown Sugar, packed
- 1 Free Range Egg
- 1/2 tsp Pure Vanilla Extract
Directions:
- Preheat oven to 350F.
- Place all ingredients into a bowl.
- Mix well.
- Spoon into 10 balls.
- Flatten with fingers & then use a fork to make the crisscross design.
- Bake 9 minutes or until the bottoms are golden brown. Do not overcook as they will harden as they cool.
