Hormone Friendly Biscotti....And A 24 Hour Easter Special

I hope each and every one of you are having a beautiful day, getting time with loved ones and relaxing!

Growing up, Easter was always about Jesus' death and resurrection (and it still is!), homemade pasta and sauce and our family's traditional biscotti.

When I first switched to a low-carb diet to support my hormone health 10 years ago (where does the time go!), I was using zoodles instead of pasta. Don't get me wrong, they are super easy and a great low-carb option, but truth be told, I never really liked them.

Thankfully, low-carb diets are more popular now and there are a ton of options available. 

I personally love and use Slendier noodles. They are made from a vegetable called konjac, are super low-carb and low calorie, and delicious!

Now, when it comes to the biscotti, I found this difficult as I was new to low-carb. I didn't really understand how to swap almond or coconut flour for conventional flour, what ratio of stevia and erythritol would be appropriate to use instead of sugar, etc.

But, this is where my amazing friend and mentor, Vanessa Romero saved the day!

She came up with a delicious, hormone friendly, low-carb biscotti recipe that is pretty similar to those that my family used to make!
