Breakfast Chocolate Mousse
If you don’t know by now, I love anything chocolate. I wanted to make something, other than a smoothie, that I could have for a delicious, yet healthy breakfast. Well, my friends, this ticks all the boxes! It is packed with powerful antioxidants from the cacao powder and the blueberries. You also get healthy fats from the coconut milk and peanut butter, and a full serving of protein from the protein powder. There is also a good amount of fibre. It really is a delicious and nutritious way to start the day!
 
I remember making this for some of my personal training clients when I lived in Sydney and they loved it! I received several texts stating how yummy they thought it was. I cannot forget one comment. She said she was tempted to lick the container because it was that good! Now that is a sign of a good recipe.
  
Ingredients:

  • 1 tbs (heaped) Organic Cacao Powder 
  • 1/4 cup Vanilla Pea protein Powder — I like this one
  • Pinch Celtic Sea Salt 
  • 1 tbs Peanut Butter (heaped) - Make sure it is 100% peanuts
  • 1/4 cup Coconut Milk
  • 1 tbs Filtered Water (optional)
  • 15-25 drops NuNaturals Vanilla Liquid Stevia
  • Organic Blueberries
 Directions:

  1. Mix the cacao powder, protein powder and salt.
  2. Add the peanut butter, coconut milk and vanilla stevia. Mix well.
  3. Add the water (optional) until you reach a consistency that you like.
  4. Dust with cacao powder.
  5. Top with a handful of organic blueberries.

  1. I just made this for dinner tonight. It almost feels like eating brownie batter. So yummy! I substituted a protein powder that I had on hand and I used a touch of honey instead of the stevia.
