Double Chocolate Chip Minute Muffin
There are a ton of minute muffin recipes on the internet. Some are sweet, such as this one, and some are savory. Either way, they really hit the spot when you are looking for something bread-like, cake-like, or muffin-like. The great thing about minute muffins is that they literally cook in one minute!

It takes less than 5 minutes to whip everything together and chuck it in the microwave. Very convenient and very versatile. You can make this double chocolate chip minute muffin for breakfast, as a mid-morning or afternoon snack or as dessert. You can leave it plain, top it with ghee, almond butter, jam or coconut whip cream. The options are endless!

I promise you this will not disappoint and will keep you full for hours because it is packed with good fat and protein. Give it a try and let me know your favorite way to eat it.

  1. Mix all of the dry ingredients in a bowl.
  2. Place the ghee in a 4 1/2 inch ramekin and microwave 30-45 seconds, until melted.
  3. While the ghee is melting, add the wet ingredients to the dry and mix well.
  4. Add the melted ghee and mix.
  5. Add the chocolate chunks and mix.
  6. Spoon the batter into the ramekin and microwave for 60 seconds.
  7. The ramekin will be hot, so take it out with an oven mitt or a dish towel.
  8. Invert the muffin onto a plate and enjoy!
Notes:

I like to cut my minute muffin in thirds horizontally. It makes it easier to eat in my opinion, but there is no right way! You can dig in with a spoon if you like.
