Paleo / Keto Blueberry Muffins
If you read my Paleo / Keto Bruschetta post, you know that giving up bread was HARD for me. So, when I first changed my eating habits, I knew that I needed some baked good alternatives that would hit the spot.

Enter blueberry muffins! The recipe I used then was from a friend - and while I really enjoyed them and they absolutely helped me change my eating habits - I wanted to create something a little lighter, fluffier and with coconut flour.

In my Banana Chocolate Chip Cookie recipe, I discuss my love for coconut flour and its impact on hormone health. It is one of my favourite hormone foods and I try to use it whenever possible.

After some tweaks and modifications, these babies were born --- and they are DELICIOUS! Not trying to toot my own horn, but really, they are yum!

  1. Preheat oven to 180° Celsius.
  2. In an electric mixer, mix together all the dry ingredients.
  3. Add in all the wet ingredients and the blueberries and mix on low for 30 seconds. 
  4. Spoon 1/4c batter into each muffin tin.
  5. Bake 27 minutes or until cooked through. 
  6. Let cool before removing from muffin tin as they will firm up.
  7. Enjoy!!
